Experience one of the most unique tasting experiences on the South Coast. At the South Coast Tap House we don’t just serve beer — we guide you on a journey of flavour and discovery.

Our personalised beer experiences are hosted by Certified Cicerone® Beer Server and Beer Educator Nigel Ayling, who brings more than 30 years of beer tasting experience. Each session includes carefully selected beers tailored to the theme of the experience and your personal taste preferences.

During the tasting you’ll explore beer styles, ingredients, brewing traditions and flavour profiles while discovering just how diverse beer can be.

Each experience runs for approximately 1 hour. Experiences are run most days, subject to availability.

Perfect for: Visitors wanting to experience the local craft beer scene and discover the flavours of the South Coast.

The experience: Discover the flavours of the South Coast through a curated tasting of beers from independent breweries along the South Coast Ale Trail. Along the way you’ll learn about the unique local ingredients that help shape these beers — including Ryefield Hops, Voyager Craft Malt and Mogwai Labs yeast, all produced right here on the South Coast.

The Beers: Approachable local styles such as pale lagers, pale ales, IPAs and amber ales, along with seasonal or specialty releases from regional brewers.


Beginner Friendly Experiences
Craft Beer 101 – The Perfect Introduction

Perfect for: Beginners who want to learn about beer in a relaxed and enjoyable environment.

The experience: Learn the fundamentals of beer — the four main ingredients (water, malt, hops and yeast) — and how they influence flavour. You’ll also learn how to taste beer properly and recognise different aroma and flavour characteristics.

The Beers: A progression of styles demonstrating the main flavour families in beer, often starting with lighter styles such as lagers or wheat beers before moving toward richer or darker beers.

“I Don’t Like Beer” Experience

Perfect for: People who think they don’t like beer but are curious to discover something new.

The experience: Many people believe they don’t like beer because they have only tried bitter lagers. This tasting explores styles that challenge the traditional idea of beer and show just how diverse beer can be.

The beers: Flavourful and approachable styles such as milk stouts, fruited sours, wheat beers or dessert-style ales that showcase chocolate, fruit, creamy or smooth flavours.

Classic European Beer Journey

The experience: Travel across Europe without leaving your seat while exploring the beer traditions that shaped modern brewing. You’ll learn how ingredients, brewing techniques and local water influenced the classic styles of different countries.

The beers: Examples inspired by Germany, the Czech Republic, the UK and Ireland, such as German Pilsners, Czech pale lagers, Schwarzbiers, Doppelbocks, English ales or traditional wheat beers.

Belgian Beer Adventure

Perfect for: People who enjoy aromatic, complex and flavourful beers.

The experience: Discover why Belgium produces some of the most distinctive beers in the world. Learn about the unique yeast strains that create fruity and spicy flavours and the rich brewing traditions of monasteries and Trappist breweries.

The beers: Belgian classics such as Saison, Dubbel, Tripel, Flanders Red and Belgian Strong Ales.

Dark Beer Discovery

Perfect for: Lovers of chocolate, coffee and roasted flavours.

The experience: Explore the rich and complex world of dark beers and discover how different roasting levels of malt influence colour, aroma and flavour.

The beers: Styles such as Porters, Stouts, Dunkels, Schwarzbiers and Bocks, showcasing flavours ranging from chocolate and coffee through to caramel and toasted malt.

Hop Lovers Experience

Perfect for: Hop lovers and IPA enthusiasts.

The experience: Explore the vibrant world of hop-forward beers and learn how brewers use hop varieties and techniques such as dry hopping to create bold aromas and flavours.

The beers: Hop-driven styles such as Pale Ales, West Coast IPAs, New England IPAs and possibly Double IPAs featuring citrus, tropical fruit, pine and resin characters.

Wild & Barrel Fermented Beer Experience

Perfect for: Adventurous beer drinkers looking to explore unique and complex flavours and people who don’t like traditional bitter beers.

The experience: Discover the fascinating world of wild and mixed fermentation. Learn how wild yeast and bacteria influence flavour and how barrel ageing adds depth and complexity to beer.

Nigel Ayling – Certified Cicerone® Beer Server & Beer Educator

Nigel Ayling has spent more than 30 years exploring the world of beer. As a Certified Cicerone® Beer Server and passionate Beer Educator, Nigel loves helping people discover just how diverse and fascinating beer can be.

Nigel is the founder of the South Coast Ale Trail, which connects independent breweries across the region, and has worked with brewers, beer festivals and industry organisations throughout Australia.

Through his work as “The Beerducator”, Nigel has introduced thousands of people to new beer styles, ingredients and brewing traditions through tastings, events and educational experiences.

At the South Coast Tap House, Nigel personally hosts all of the tasting experiences, guiding guests on a relaxed and engaging journey through the flavours, stories and history behind great beer.
